Southern Foodways and Culture: Local Considerations and Beyond, Edited by Lisa J. Lefler Still reading the book but though some members might find section three especially interesting as it deals with Cherokee Snake Bite mythology and herbology as a means of negating the affect / effect of the serpents poisons.   It's a viewable PDF file but can also be downloaded which makes it nice in my opinion.
